Can I install the countertop heater between supporting wood (ex. corbels, supporting beams, plywood, etc.) and the countertop?

Yes, but accommodation for the tail location (a 2“x2“ bump) must be made in the wood. Countertop heaters can go between the wood, corbels, support beams, etc., but the tail location must not get compressed between the stone and the supporting wood.
